Italian Office or New Business in Italy?

Hi,
I have a successful UK LTD company that imports and distributes marble, slate, granite, onyx and limestone from various suppliers around the globe. I have an office in London (Virtual) and a stock yard in the Sth of France but I am based in Australia. I have completed considerable business with a company based in Ventimiglia, Italy. Marco the owner of the company in Italy is registered as an artigano within the Italian system, he has a physical yard and company based in Ventimiglia. The company is equipped with considerable machinery and equipment for the production of granite work tops, vanity tops, staircases and anything that can be produced with natural stone. We would like to form a company together that imports natural stone from overseas (outside Europe) and also purchases within Europe plus Exports Italian marbles outside of Europe. What would be the best course of action and structure to setup? As Marco is registered as an artigano this creates some issues and we have the possibility/opportunity of registering the new entity in his wife's name?
Can anyone advise the best structure for the new company? The costs involved? The timescales? And someone who can put the plan in motion?
