Open Company in Ireland, Living Elsewhere

We are thinking about incorporating our small software development instead of working as self-employed. We develop video games, which are then sold worldwide.

What we would like to go is to open a company in a stable economy and thus pay corporate taxes there (Ireland and UK are our current choices as they give access to tools like Kickstarter for crowdfunding, for example, and they have low corporate tax). But we will be physically living elsewhere; we are currently in Portugal, for example, but we will be in Spain or France next year.

Is this something that can be done? What kind of experts would we need to help set this up? And what kind of maintenance cost would this entail?
